Cornish Egg and Tomato Curry Recipe

Who doesnt like a Curry, especially when it's an Egg Curry with Cornish Eggs! Make it as hot or mild as you like. Super tasty.

Ingredients:

  • 6 Cornish eggs
  • 3 large tomatoes, finely chopped
  • 1 large onion, finely chopped
  • 2-3 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons oil
  • Salt to taste
  • 1/2 cup water

Instructions:

1. Boil the Eggs:

  1. Place the eggs in a pot of cold water and bring it to a boil.
  2. Once boiling, reduce the heat and let them simmer for 9-10 minutes.
  3. Remove the eggs, cool them under cold water, peel, and set aside.

2. Prepare the Base:

  1. Heat oil in a large pan over medium heat.
  2. Add cumin seeds and mustard seeds. Let them splutter.
  3. Add chopped onions and green chilies. Sauté until the onions turn golden brown.
  4. Add ginger-garlic paste and cook for another 2-3 minutes until the raw smell disappears.

3. Cook the Tomatoes:

  1. Add the chopped tomatoes to the pan and cook until they soften and start breaking down.
  2. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  3. Cook the mixture until the oil begins to separate from the tomato mixture, indicating that the masala is ready.

4. Add Water:

  1. Pour in 1/2 cup of water, stir, and bring the curry to a gentle boil. Adjust the water quantity to achieve your desired curry consistency.

5. Add the Eggs:

  1. Cut the boiled eggs in half and gently place them in the curry, yolk side up.
  2. Spoon some of the curry over the eggs to coat them well.
  3. Sprinkle garam masala over the top and let the curry simmer for another 5-7 minutes on low heat, allowing the eggs to absorb the flavors.

6. Garnish and Serve:

  1. Turn off the heat and garnish with chopped cilantro.
  2. Serve hot with steamed rice, naan, or roti.

Tips:

  • For a richer flavor, you can fry the boiled eggs slightly before adding them to the curry.
  • Adjust the spice levels according to your taste.
